What started in Belgium as a ?sh feed production company in the 1980s, Royal Belgium Caviar has since evolved and is now considered one of Europe’s most acclaimed producers of caviars. In the early nineties, biologist Dr. Willy Verdonck was engaged in the breeding of sturgeon caviar, which yielded the ?rst results in 2002. Through years of intensive research, Dr. Verdonck managed to completely control the breeding cycle of some sturgeon species (and he is now considered an international authority on caviar production).

Royal Belgian Siberian Caviar comes from a broodstock of Siberian sturgeon (Acipenser baerii) – a cold-loving species which thrives in aquaculture and produces exceptional, dark eggs that have a mildly sweet, almost buttery ?avor. Though the roe of the Siberian sturgeon is commonly on the smaller side, the eggs of the Royal Belgian Siberian range from 2.8 to 3 mm in diameter – making them larger than most Siberian caviars on the market, almost the size of Beluga. Consistent and exquisite, the ?rm grain is robust with an attractive, almost mirror-like sheen.
